Spiced Poha Perfection
A quick and flavorful breakfast or snack recipe made with flattened rice (poha), infused with aromatic spices and vibrant vegetables for a wholesome and satisfying meal.
Ingredients (Serves 2-3)
Base:
- 2 cups thick poha (flattened rice)
- 2-3 tbsp water (for softening)
Tempering and Aromatics:
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder (optional)
- 2-3 green chilies, finely chopped
- 1 tbsp ginger, finely chopped
- 10-12 curry leaves
Vegetables:
- 1 medium onion, finely chopped
- 1/2 cup diced potatoes (optional)
- 1/4 cup carrots, finely chopped
- 1/4 cup green peas (fresh or frozen)
Flavor Enhancers:
- Salt to taste
- 1 tsp sugar (optional)
- Juice of 1 lemon
Garnish:
- 2 tbsp roasted peanuts or cashews
- 2 tbsp fresh coriander, finely chopped
- Grated coconut (optional)
Instructions
- Prepare the Poha:
- Rinse the poha under running water in a sieve for 10-15 seconds until softened. Let it drain completely. Sprinkle a little water if needed, ensuring it doesn’t become mushy. Set aside.
- Cook the Vegetables:
- Heat oil in a pan over medium heat.
- Add mustard seeds and let them splutter. Add cumin seeds, curry leaves, and green chilies. Sauté until aromatic.
- Stir in the onions and cook until translucent.
- Add diced potatoes, carrots, and peas. Cover and cook until the vegetables are tender.
- Add the Spices:
- Lower the heat and add turmeric powder and red chili powder. Mix well.
- Add a pinch of salt to the vegetables to enhance the flavor.
- Incorporate the Poha:
- Gently fold in the softened poha, ensuring it is evenly coated with the spice mixture.
- Add sugar (if using) and adjust salt to taste.
- Sprinkle a few drops of water if the mixture seems dry. Cook for 2-3 minutes on low heat.
- Finish with Garnish:
- Turn off the heat and squeeze fresh lemon juice over the poha.
- Garnish with roasted peanuts or cashews, coriander, and grated coconut for extra texture and flavor.
