  • 2 tbsp butter (for toasting)
  • 1 tsp oregano (optional)
  • 1 tsp chili flakes (optional)

For Garnish:

  • Fresh coriander leaves
  • Lemon wedges

Instructions

Step 1: Prepare the Paneer Bhurji

  1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and green chilies. Sauté for another minute until fragrant.
  4. Add chopped tomatoes and cook until they soften and release oil.
  5. Mix in the turmeric powder, red chili powder, and garam masala. Stir well.
  6. Add the crumbled paneer and bell peppers (if using), and sauté for 2-3 minutes until the paneer absorbs all the spices.
  7. If you’re using peas, add them now and cook for another 2 minutes.
  8. Adjust salt to taste and stir in fresh coriander leaves for a fresh burst of flavor.
  9. Remove from heat and set aside.

Step 2: Toast the Bread

  1. Heat a griddle or tawa over medium heat.
  2. Spread butter generously on both sides of each bread slice. If desired, sprinkle oregano and chili flakes on the buttered side for extra flavor.
  3. Place the bread slices on the griddle and toast until golden and crispy on both sides. Flip carefully to avoid burning.
  4. Remove from heat and set aside.

Step 3: Assemble the Paneer Bhurji Toast

  1. Take a slice of the toasted bread and spread a generous layer of paneer bhurji on top. Press gently to ensure the mixture sticks.
  2. You can serve it open-faced or add another toasted slice on top to make a sandwich.
  3. Garnish with fresh coriander leaves and serve with a wedge of lemon on the side.
